Named Freekeh, from the Arabic word “to rub,” this accidental discovery continues to delight palates to this day.

Cooking Instructions:

1. Rinse 1 cup of Freekeh in cold water. Soak for 15 minutes (optional).
2. In a medium saucepan, combine Freekeh and 2 cups of water or stock with a pinch of salt.
3. Bring to a boil, then simmer on low heat, covered, for 20-25 minutes or until all water is absorbed (stir occasionally while simmering).
4. Remove from heat and let stand for 5 minutes before serving.
