250g Rolled oats

200g Mixed nuts

150g Mixed seeds

40g Chia seeds

10un Dried apricots

80g Raisins

150g Med Cuisine Silan Medjool Date Syrup

50g Olive oil

2tsp Ground cinnamon

2tsp Ground cardamom

1 pinch of Maldon salt


Heat up the oven to 150C.
In a bowl place the oats, chopped nuts, seeds, raisins and chopped apricots.

Add the date syrup, olive oil, cinnamon, cardamom and Maldon salt in a pan. Bring it to boil, whisking constantly, until the liquids emulsify.

Pour the hot liquid over the dry ingredients mixing well.

Line a baking tray with parchment paper.
Pour the granola mix onto the tray, spread it evenly and take it to the oven for about 20 minutes, opening the oven and mixing well every 5 minutes.

Allow it to cool down before storing in an air tight container.

Enjoy it over yoghurt and with your favourite fruits. And why not with an extra dash of date syrup?! 💫
