Classic hummus, with a striking black-sesame twist. This black tahini is made with creamy chickpeas blended with rich Med Cuisine Black Tahini, fresh lemon and garlic until silky smooth. A drizzle of olive oil and a scattering of black and white sesame seeds give this bold mezze dip its final flourish.
The Recipe
Ingredients
600g cooked chickpeas, drained
4 tbsp Med Cuisine Black Tahini
Juice of 1 lemon
2–3 garlic cloves, peeled
2 tbsp extra virgin olive oil
Cold water, as needed
Salt, to taste
To Finish
Extra virgin olive oil, for drizzling
Black and white sesame seeds
Method
Load the processor. Add the chickpeas, Black Tahini, lemon juice, garlic, olive oil and a pinch of salt to a food processor.
Blend. Process until smooth, scraping down the sides as needed. Add cold water a little at a time and continue blending until the hummus is silky and spoonable.
Season. Taste and adjust with more salt, lemon juice or garlic if needed.
Serve. Spoon into a shallow bowl, make a few swirls with the back of a spoon, then finish with olive oil and black and white sesame seeds.
🌿 Med Cuisine Tip: Add the cold water gradually while the processor is running. Black tahini loosens quickly, and a little extra blending time creates a lighter, silkier hummus without making it watery.
