Brownies with a Kick of Sweet Tahini (GF)

Deeply fudgy and irresistibly nutty, these gluten-free brownies are made with Med Cuisine Sweet Sesame Butter Tahini Sauce, dark chocolate and hazelnuts for a rich balance of sweet, bitter and savoury flavours. Baked until just set, then chilled overnight for an extra-dense texture, they’re delicious on their own or gently warmed and served with cream or ice cream.
The Recipe
Ingredients
80g dark brown sugar
20g maple syrup
1 tsp vanilla paste
2 large eggs
40g cocoa powder
1 tbsp almond flour
½ tsp bicarbonate of soda
Pinch of Maldon salt
50g dark chocolate, chopped, or dark chocolate chips
80g hazelnuts, toasted and halved
To Finish, Optional
Extra Sweet Sesame Butter Tahini Sauce, for swirling or drizzling
Melted dark chocolate, whipped cream or ice cream, to serve
Method
Heat the oven. Preheat the oven to 180°C. Spread the hazelnuts on a baking tray and toast for 8–10 minutes until golden and fragrant. Leave them to cool, then halve them.
Line the tin. Line a 20 x 20cm baking tin with baking parchment, leaving a little overhang to help lift out the brownies.
Whisk the base. Put the Sweet Sesame Butter Tahini Sauce, dark brown sugar, maple syrup, vanilla paste and eggs in a large bowl. Whisk until completely smooth and glossy.
Fold in the dry ingredients. Add the cocoa powder, almond flour, bicarbonate of soda and Maldon salt. Fold gently until no dry pockets remain, taking care not to overmix.
Add the chocolate. Fold through the chopped dark chocolate and cooled hazelnuts with a silicone spatula.
Bake. Scrape the mixture into the lined tin and smooth the surface. Swirl over a little extra Sweet Sesame Butter Tahini Sauce, if using, then bake for 20–25 minutes. The edges should be set while the centre remains slightly soft.
Chill overnight. Cool completely in the tin, cover and refrigerate overnight. This firms the centre and develops the dense, fudgy texture.
Slice and serve. Lift the brownies from the tin and cut into 12 squares. Finish with melted chocolate or a tahini drizzle, and serve chilled or gently warmed with cream or ice cream.
🌿 Med Cuisine Tip: Take the brownies out while the centre still looks slightly underdone — residual heat will finish setting them, and the overnight chill will create the dense, fudgy texture. Overbaking is the quickest way to lose that soft centre.
