Golden, crunchy and fragrant with chickpeas and herbs, these falafel balls use Med Cuisine Falafel Mix for authentic street-food flavour without the lengthy preparation. Serve them hot with bright, tangy Amba Sauce and a generous drizzle of creamy Natural Tahini for a bold mezze plate that comes together with very little hands-on work.
The Recipe
Ingredients
Med Cuisine Falafel Mix, as needed
Still water, in an equal 1:1 ratio with the falafel mix
Neutral oil, for deep frying
To Serve
Method
Mix. Add equal quantities of Falafel Mix and still water to a large bowl. Stir thoroughly until no dry pockets remain.
Rest. Leave the mixture for 40 minutes so the chickpeas and herbs can hydrate, stirring it occasionally during the resting time.
Heat. Fill a deep, heavy-based pan no more than halfway with neutral oil and heat it to 170°C.
Shape. Form the rested mixture into compact balls of an even size, pressing gently so they hold together without becoming dense.
Fry. Lower the falafel carefully into the hot oil in small batches. Fry until deeply golden and crisp, allowing the oil to return to 170°C between batches. Drain on kitchen paper.
Serve. Bring the falafel to the table while hot and crisp, with Amba Sauce for tang and Natural Tahini for a rich, creamy finish.
🌿 Med Cuisine Tip: Do not shorten the 40-minute rest. It fully hydrates the mixture so the falafel hold their shape and stay tender inside. Fry in small batches to prevent the oil temperature dropping, which can make them greasy rather than crisp.
