Delicately crumbly and deeply nutty, these buttery cookies put Med Cuisine Natural Tahini at the centre of every bite. Each one bakes until just golden, then gets a whole almond and an optional drizzle of melted chocolate. Perfect with a cup of tea or coffee, these cookies offer a Middle Eastern twist on a timeless classic.
The Recipe
Ingredients
400g plain flour
10g baking powder
200g caster sugar
200g unsalted butter, softened
To Decorate
Whole almonds
Melted chocolate, optional
Other toppings of your choice, optional
Method
Preheat. Heat the oven to 180°C and line two baking trays with baking parchment.
Make the dough. Add the flour, baking powder, sugar, softened butter and Natural Tahini to a large bowl. Mix by hand, then knead gently just until a smooth, uniform dough forms.
Shape. Divide the dough into approximately 40 equal portions. Roll each into a ball, arrange on the lined trays with a few centimetres between them, and press a whole almond gently into the centre of each cookie.
Bake. Bake for about 15 minutes, until the cookies are pale golden at the edges. Avoid overbaking, as they will firm up as they cool.
Cool. Leave the cookies on the trays for 5 minutes before transferring them carefully to a wire rack to cool completely.
Decorate. Drizzle with melted chocolate or add other toppings if desired. Once fully cool, store in an airtight container.
