Freezer fudge with the nutty vanilla richness of Med Cuisine Sweet Sesame Butter Tahini Sauce, mellow coconut oil and crunchy hazelnuts. A little Organic Silan Date Syrup adds caramel depth, while rose petals and sea salt bring a fragrant, elegant finish. Silky, nutty, and beautifully balanced, each bite melts in your mouth and offers a refined twist on traditional treats. Perfect as a chilled dessert or a mindful indulgence.
The Recipe
Ingredients
¼ cup coconut oil, melted
1–2 tbsp Med Cuisine Organic Silan Date Syrup, optional
¼ tsp fine sea salt
¼ cup hazelnuts, roughly chopped
To Finish
Dried rose petals
Flaky sea salt
Method
Mix the base. Add the Sweet Sesame Butter Tahini Sauce, melted coconut oil, Organic Silan Date Syrup and fine sea salt to a mixing bowl. Stir until completely smooth and glossy.
Add the hazelnuts. Fold the chopped hazelnuts through the tahini mixture so they are evenly distributed.
Portion. Arrange 12 small paper cases or silicone moulds on a flat tray. Divide the mixture evenly between them.
Decorate. Sprinkle a few dried rose petals over each piece, pressing them in lightly so they stay in place.
Freeze. Transfer the tray to the freezer and leave for about 45 minutes, or until the fudge is completely firm.
Serve. Keep the fudge stored in the freezer. Remove it about 5 minutes before serving, then finish each piece with a small pinch of flaky sea salt.
🌿 Med Cuisine Tip: Keep the paper cases on a flat tray while freezing so the pieces set evenly. Coconut oil softens quickly at room temperature, so take out only the number you plan to serve.
