Frozen vanilla parfait, layered with sharp raspberry sauce, pistachios and ribbons of Med Cuisine Sweet Sesame Butter Tahini Sauce. Airy cream and softly whipped eggs give it a smooth, sliceable texture, while the nutty vanilla tahini brings a rich finish to every bright, berry-filled layer.
The Recipe
For the Parfait
2 large eggs, separated
50g caster sugar
½ tsp vanilla paste
200g double cream
40g pistachios, chopped
Med Cuisine Sweet Sesame Butter Tahini Sauce, for layering and drizzling
For the Raspberry Sauce
150g fresh raspberries
20g caster sugar
To Finish
Fresh raspberries
Chopped pistachios
Mint leaves
Method
Cook the sauce. Put the raspberries and 20g caster sugar in a small saucepan. Cook over a medium heat for about 5 minutes, stirring occasionally, until the fruit breaks down.
Strain and cool. Push the sauce through a fine sieve and discard the seeds. Transfer to a small bowl, press cling film directly onto the surface and leave to cool completely.
Line the tin. Lightly grease a 20 x 8 x 5cm loaf tin and line it with a double layer of cling film, leaving enough overhang to lift out the frozen parfait.
Whisk the yolks. Beat the egg yolks, 50g caster sugar and vanilla paste in a stand mixer until thick, pale and increased in volume.
Build the base. Whip the double cream to stiff peaks and gently fold it into the yolk mixture. In a clean bowl, whisk the egg whites to stiff peaks, then fold them in carefully to preserve as much air as possible. Fold through the chopped pistachios.
Layer and freeze. Spoon a layer of parfait into the tin, then add a little raspberry sauce and a drizzle of Sweet Sesame Butter Tahini Sauce. Repeat until the tin is filled, cover and freeze overnight until firm.
Serve. Invert the parfait onto a serving plate and peel away the cling film. Leave it to soften for a few minutes, then finish with fresh raspberries, chopped pistachios, mint and another drizzle of Sweet Sesame Butter Tahini Sauce.
🌿 Med Cuisine Tip: Make sure the raspberry sauce is completely cold before layering so it does not deflate the parfait. For clean slices, dip a sharp knife in hot water and wipe it dry between each cut.
