Golden, crunchy and warmly spiced, this homemade granola combines rolled oats, nuts, seeds and chewy dried fruit with the deep caramel sweetness of Med Cuisine Organic Silan Date Syrup. Cinnamon, cardamom and a pinch of Maldon salt round out every cluster, ready for yoghurt, plant milk or snacking straight from the jar.
The Recipe
Ingredients
250g rolled oats
200g mixed nuts, roughly chopped
150g mixed seeds
40g chia seeds
10 dried apricots, chopped
80g raisins
50g olive oil
2 tsp ground cinnamon
2 tsp ground cardamom
Pinch of Maldon salt
Method
Preheat. Heat the oven to 150°C and line a large baking tray with baking parchment.
Combine. Add the oats, nuts, mixed seeds, chia seeds, apricots and raisins to a large bowl, then mix well.
Warm. Put the Silan, olive oil, cinnamon, cardamom and Maldon salt in a small saucepan. Warm over a medium heat, whisking constantly, until the mixture is smooth and just reaches the boil.
Coat. Pour the hot Silan mixture over the dry ingredients and stir thoroughly, making sure everything is evenly coated.
Bake. Spread the granola evenly over the prepared tray. Bake for about 20 minutes, stirring every 5 minutes so the edges do not burn and the mixture colours evenly.
Cool. Leave the granola on the tray until completely cool, then break it into clusters and transfer to an airtight container.
Serve. Spoon over yoghurt, add your favourite fruit and finish with an extra drizzle of Silan, or enjoy by the handful.
🌿 Med Cuisine Tip: Granola becomes crisp as it cools, not while it is still hot. Leave it undisturbed on the tray after its final stir, then break it up once cold for chunkier clusters.
