Banana bread, with a Levantine twist. Ripe bananas and Med Cuisine Organic Silan Date Syrup bring caramel sweetness, while Natural Tahini keeps the crumb soft and adds deep roasted-sesame richness. Cocoa makes it dark, fudgy and satisfying without weighing it down.

Wet Ingredients
3 overripe bananas, mashed
1 tsp vanilla extract
200ml plant-based milk
1/3 cup vegetable oil
1/3 cup Med Cuisine Natural Tahini
Dry Ingredients
200g spelt flour, or flour of choice
1/3 cup cocoa powder
1 tsp baking powder
1/2 tsp bicarbonate of soda
1 tsp cinnamon, optional
Vegan chocolate chips, optional, for topping
Method
Mix the wet ingredients. Add the mashed bananas, vanilla extract, plant-based milk, vegetable oil, Organic Silan Date Syrup and tahini to a large bowl. Whisk until smooth and evenly combined.
Add the dry ingredients. Sift in the flour, cocoa powder, baking powder, bicarbonate of soda and cinnamon, if using. Fold until just combined — avoid overmixing.
Fill the tin. Pour the batter into a lined loaf tin and smooth the top. Scatter over vegan chocolate chips, if using.
Bake gently. Bake at 150°C for 25–35 minutes, until the loaf has risen and the centre is nearly set.
Finish at high heat. Increase the oven temperature to 180°C and bake for a further 10 minutes, or until the centre is just set.
Cool and serve. Leave the loaf to cool in the tin before lifting it out and slicing into 10 portions.
🌿 Med Cuisine Tip: Stir the tahini before measuring so its natural oils are fully blended, then stop folding as soon as the flour disappears. Overmixing develops the gluten and can turn a soft banana loaf dense.
