Date Syrup: Taste, Uses & Natural Sweetener Guide

Date syrup, with the colour of polished amber and a scent between caramel and ripe fruit, is one of the world's oldest sweeteners. While it has been enjoyed across the Middle East for millennia, it is now finding a wider audience in UK kitchens. Consumers looking for a natural, vegan alternative to refined sugar are falling for its rich, fruity flavour and remarkable versatility.

Across the Middle East, date syrup is known by different names, like silan and dibis. Its English name, date syrup, encompasses exactly what it should be: dates, and nothing else. No refining, no added sugar, no clever processing. Just the concentrated sweetness of one of the Middle East's most treasured fruits.

In this guide, we will cover what date syrup is, what it tastes like, how it compares to honey and maple syrup, and all the ways to use it.

What Is Date Syrup?

Date syrup is a thick, pourable sweetener made by gently steaming and pressing ripe dates to draw out their natural sugars. This mindful process, where the dates are never harshly heated, produces a complex flavoured syrup that is 100% fruit: deeply sweet, rich with caramel notes, and carrying a gentle tang.

Because it comes from whole dates, the syrup retains most of the flavour and nutrients found in the fruit itself. Our Silan Date Syrup and Organic Silan Date Syrup are naturally rich in potassium and fibre, with nothing added and nothing taken away. One ingredient on the label: organic dates.

You may see it sold as date syrup, date molasses, silan or dibis. They all describe the same beautiful thing. However, thickness, quality and intensity vary between producers depending on the dates used and how they are heated and pressed.

The Trend Is New. The Practice Is Ancient.

A Sweetener With Ancient Roots

Long before refined sugar existed, cooks across the Middle East and North Africa were sweetening their food with dates. The date palm has been cultivated in the region for thousands of years, and one of the earliest ways to preserve the harvest was to make a keeping syrup and utilise the sweetness of the fruit for the long term.

In some traditions, it is even called date honey, a name that says everything about how it was valued. It sweetened festive pastries, enriched stews, and was stirred through breakfast dishes generations before anyone put a squeezy bottle on a supermarket shelf.

So while date syrup might feel like a modern discovery to UK shoppers, you are really joining a very old club.

What Does Date Syrup Taste Like?

If you have never tried it, the closest comparison is a cross between soft caramel and blackstrap molasses, but brighter and fruitier than either:

Deep Caramel

Rich, toffee-like sweetness with real depth, closer to caramel than to plain sugar.

Intensely Fruity

The dates come through clearly: warm, sun-ripened and rounded.

Gently Tart

A subtle tang keeps the sweetness balanced rather than cloying.

Works Both Ways

Sweet enough for pancakes, versatile enough to balance savoury marinades and dressings.

Date Syrup vs Honey vs Maple Syrup

All three are natural sweeteners, but they are not interchangeable. Here is how date syrup stands apart:

Date Syrup

Made purely from fruit, so it is naturally vegan. Its deep, complex caramel flavour and velvety texture make it versatile enough for a range of culinary uses.

A higher fibre content also means Date Syrup has a lower Glycemic Index (GI) than honey and maple syrup, which means less sugar spikes and more sustained energy release.

Honey

Floral and delicate, but not plant-based, therefore not suitable for vegan cooking. Date syrup steps in beautifully wherever a recipe calls for honey, spoon for spoon.

Maple Syrup

Thinner in texture and lighter in flavour, maple syrup also has fewer of the minerals and antioxidants found in dates.

The short version: if you want a versatile, minimally processed, plant-based sweetener with real character and nutritional benefits over others, date syrup should have a permanent spot in your kitchen.

How to Use Date Syrup

This is where date syrup wins hearts. It moves between sweet and savoury dishes with total confidence:

Sweet Starts

◆

Porridge and overnight oats: a spoonful stirred through warm oats is the perfect upgrade to the classic breakfast.

◆

Pancakes and waffles: swap the usual syrup for something with far more depth in taste.

◆

Coconut yoghurt and granola: an amber drizzle that makes a simple bowl feel indulgent.

◆

Baking: use it in flapjacks, brownies and sticky cakes for a caramel note that sugar cannot match.

◆

Smoothies and milkshakes: a natural sweetener that blends in seamlessly.

◆

Coffee: one squeeze in a flat white or iced latte adds sweetness and depth.

Savoury Surprises

◆

Roasted roots: toss carrots, parsnips or squash with olive oil and a spoonful of date syrup before roasting. Add garlic, a pinch of salt, and herbs of your choice; the vegetables will taste amazing with beautifully caramelised edges.

◆

Marinades and glazes: balance the heat of harissa or the warmth of baharat with a touch of date sweetness.

◆

Salad dressings: whisk with lemon juice, olive oil, crushed garlic and a pinch of salt for a dressing that flatters bitter leaves.

◆

Grain bowls: a thin drizzle over freekeh or rice bowls ties spiced vegetables together.

◆

Cheese boards and mezze: serve alongside olives, nuts and dips as the sweet note on the table.

🌿 Med Cuisine Tip: Mix equal parts date syrup and tahini for a two-ingredient spread that has been beloved across the Middle East for generations. Sweet, nutty, and dangerously good on warm toast.
