Soft-centred chocolate cookies that blend the flavours of roasted sesame with the caramel-notes Med Cuisine Organic Silan Date Syrup. The tender mix of Natural Tahini and ground almonds is elevated by a sesame-seed coating adding a fragrant crunch, while a short bake keeps the centres rich, chewy and deeply chocolatey.
The Recipe
Ingredients
150g ground almonds
2 tbsp cocoa powder
1 tsp baking powder
4 tbsp sesame seeds, for coating
Method
Preheat. Heat the oven to 180°C and line a baking tray with baking parchment.
Mix. Add the tahini, Silan, ground almonds, cocoa powder and baking powder to a food processor. Blend until the mixture comes together as a uniform dough. Alternatively, mix thoroughly by hand in a bowl.
Shape. Divide the dough into 10–12 portions and roll each into a 2–3cm ball. Roll the balls in the sesame seeds until evenly coated, then arrange them on the lined tray with space between each one.
Bake. Bake for no more than 10 minutes, until the cookies are just set around the edges but still soft in the centre. Do not overbake.
Cool. Leave the cookies on the tray for 5 minutes so they can firm up, then transfer them carefully to a wire rack to cool completely.
🌿 Med Cuisine Tip: Take the cookies out while the centres still look slightly underdone. They continue to set on the hot tray, and that residual heat is what keeps them soft and chewy instead of dry.
